Rapid Fire Challenge

Rapid Fire

The 2025 Rapid Fire Market Basket Competition is presented by the American Culinary Federation (ACF)!  Chefs are invited to prepare dishes using ingredients in the basket and focus on taste, presentation, and cooking within a time limit. 

The winner will be crowned the Florida Restaurant Show's Rapid Fire Champion, receive $1,000 and an ACF medal, bragging rights and gain exposure.

US Pizza Team Galbani Professionale Pizza Cup

The US Pizza Team and Galbani Professionale US will be hosting the ’25 Galbani Professionale Pizza Cup at the 2024 Pizza Tomorrow Summit, which is co-located with the Florida Restaurant Show in Orlando!

This event will be a head-to-head battle between talented pizzaioli and pizza acrobats from across the nation, all vying for the Grand Prizes in both Culinary and Acrobatics of a trip to compete in the World Pizza Championships in Parma, Italy in April of 2025.

ACF Fruit/Vegetable Carving (Mystery Basket) Competition

Wednesday, November 6, 2024 | 11:00 AM - 3:00 PM at the ACF Live Action Showpiece Competition Booth 1689 

  • Competition Theme - Festivals and Celebrations: Christmas, Halloween, or cultural festival with carvings representing symbols associated with those events.

  • Competitors have three hours to create and display a showpiece.

  • Identical mystery basket of fruits and vegetables for all competitors.

  • Every item in the basket must be used in the final display.

  • Limited use of toothpicks/skewers allowed.

  • Avoid non-edible floral items or foliage.

ACF Cake Decorating Competition

Thursday, November 7, 2024 | 11:00 AM - 1:00 PM at the ACF Live Action Showpiece Competition Booth 1689 

  • Competition Theme - Festivals and Celebrations: Christmas, Halloween, or cultural festival with carvings representing symbols associated with those events.

  • Competitors have three hours to decorate and display a cake.

  • Cake must be made up of at least three, 9-inch, three-layer cakes (or equivalent).

  • Cakes can be pre-crumb coated but not fully finished.

  • Competitors finish the cake with glaze, buttercream, fondant, or chocolate, fitting the theme.

  • All decorations must be made on-site, using edible materials only.

General Guidelines:

  • Harmonize ingredients and garnishes.

  • Demonstrate clean, crisp workmanship.

  • Use a variety of techniques to showcase multiple skills.

  • Punctuality is key – present your work on time!

  • Ensure chocolate work is properly tempered, and sugar work shines with harmonious coloring.

Important Notes:

  • Competitors must bring their own tools and equipment.

  • A small microwave may be brought in for categories E-3 and E-4.

  • Electrical requirements for sugar work must be arranged in advance.
